The Gas Double Rotating Rack Oven produces the quality bake expected from a Baxter oven, while utilizing the added advantage of lower operating costs associated with gas heat. This 72" W x 62" D model will hold one double oven rack or two single oven racks in side load or end load configurations.

Capacity
Bakes 200 each of 1 lb. loaves, using 5-on strap pans with a full-height single rack.
Bakes 150 each of 1lb. loaves, using 5-on strap pans with a full-height single rack.
Holds up to 48 bun pans (depending on spacing).

Gas Connect Point: 3/4" NPT
- Natural Gas (std): 300k BTU/hr @ 5"-14"w.c. (88 kJ/s @ 1.25-3.5 kPa)
Power - 2 supplies required: 120/60/1 20 amp dedicated circuit.
Water Connect Point: 1/2" NPT. Cold water @ 30 psi (207 kPa) minimum @ 4.5 GPM flow rate.
Drain Fitting: Choose either rear or front drain and plug the drain connection that is not in use. Route to air-gap drain
- Front Drain: 3/8" NPTM
- Rear Drain: 3/4" NPTF
Hood Vent: 8" diameter connection collar. Minimum 750 cfm recommended with 0.6" w.c. static pressure drop through hood. Hood is fully welded. Customer to supply duct and ventilator fan per local code. Airflow proving switch is factory installed and integrate with burner system operation. Oven provided relay with max. 6.0 amp 1/3 H.P. @ 120V output for fan operation.
Consult local authorities to determine whether Type I (grease) or Type II (vapor) duct and ventilator fan will be required.

Installation
Floor should be level within 1/8" per foot for proper installation. Slope should not exceed 3/4" in all directions under the unit. Floor anchors require minimum of 1" thick solid floor substrate.
The purchaser is responsible for all installation costs and for providing: Disposal of packing materials; labor to unload oven upon arrival; installation mechanics; and all local service connections including electricity, vents, gas, water and drain per local code. A factory technician or factory authorized installation technician must supervise and approve any installation. In order to validate the warranty, start-up must be performed by an authorized service company. All services must comply with federal, state and local codes.
