Metro Heated Holding and Proofing Cabinet Holds 18 Pans

Metro C519-CFC-4 heated holding and proofing cabinet can hold (18) 18in x 26in pans or (34) 12in x 20in pans. Metro designed this holding/proofing cabinet to have the ability at the flip of a switch change from headted holding mode to proofing mode. On the bottom of the cabinet Metro added individual analog controls for temperature and humidity. All C5 1 Series models feature a forced air heating system that will provide fast heat up and heat recovery. Metro built the see through door to have a clear non-insulated polycarbonate door that allows the user to easily monitor the contents inside. To make their holding and proofing cabinets mobile Metro added (4) 3in casters, 2 have brakes. Users will know that they have a high quality item because the C5 cabinets are UL, cUL, and NSF listed.
