Carter-Hoffmann HWF18A1GM humidified holding cabinet uses hot forced air and a water reservoir heating system to keep up to (18) 18in x 26in pans or (36) 12in x 20in pans warm. Carter-Hoffmann built this holding cabinet with single panel tempered glass door set in an extruded frame to allow more visibility into the unit. There is a drip trough with a 1/2in diameter drain at the base of the door that catches any condensation that may form inside of the holding cabinet that will protect the bottom mounted heating system. Carter-Hoffman uses a 1700 watt coiled incoloy sheathed heating element, a water reservoir with 350 watt heating element and a blower fan that circulates the air and gives the HWF holding cabinet the ability to heat up fast and more evenly than a standard holding cabinet. To ensure that the HWF18A1GM unit as a whole stays the same temperature throughout and to save energy Carter-Hoffman added a 1in thick high density insulation on the top and sides of the unit. For added convenience Carter Hoffman installed a digital thermometer with a remote sensing bulb to detect and display the inside temperature of the unit. Since this heated holding cabinet is made out of all aluminum it can be wiped clean easily.
