Imperial Range uses a unique cool zone that captures food particles and keeps them from carbonizing the frying zone which results in better tasting food. If you need more room all that is needed is to take the 2 fry baskets out and the cooking zone becomes a bulk area for items like tortilla chips. The Imperial IFS-75-E Eliete fryer has a 5 tube-fired heating system which provides more heating energy than other standard fryers.
